1. Cream the butter and sugars until light and fluffy.
2. Add pumpkin purée and vanilla extract. Mix well.
3. In a separate bowl, sift the flour, spices, baking soda and salt together.
4. Slowly incorporate the dry ingredients into the wet.
5. Add chocolate chips and optional caramel bits. Mix well.
6. Cool in fridge for at least 30 minutes.
7. Scoop and arrange onto baking sheet about one inch apart.
8. Bake at 365 for 13-15 minutes.
9. They will still be very gooey and can be left in the oven for a few extra minutes, if desired, but will need to cool to fully set.
